Cherry Tomato Avocado Salad

Ingredients

  • Salad:

    • 4 cups avocados, medium diced

    • 2 cups of grape or cherry tomatoes - halved

    • 2 cups cucumbers, peeled and diced

    • 1 cup red onion, small diced

    • ¼ cup of chopped fresh cilantro

    Dressing:

    • ¼ cup balsamic vinegar

    • Salt & pepper

    • A splash of olive oil

Directions

  • Chop everything up and put in a good size bowl. Mix with the dressing and enjoy!
